The Egg Sandwich

I made this sandwich for lunch the other day, it was sort of an accident. This was moldy, don’t have that… you know.:) But it turned out so good that I had to write down the recipe! I ah… took a bite first and realized how much I liked it and decided to take pictures to go with the recipe.:)

Ingredients:

  • 1 English muffin (plain, toasted)
  • 1 medium or large egg
  • 1-2 Tbs. Parmesan cheese (how ever much you like)
  • 3-4 inches green onion
  • Butter or cooking spray

Grease a small microwave safe bowl and scramble the egg in it. Sprinkle the cheese on top. Microwave (covered!) for about 40-50 sec. or until the egg is cooked. Dice green onion. Place egg patty on English muffin and sprinkle with green onions, cover with muffin top. Let sandwich cool while you unload the dishwasher. Enjoy!
