I found this recipe in a Better Homes and Gardens Favorite Bars & Cookies cookbook…
I love this recipe! It requires simple ingredients and can be changed up with different kinds of jam.
Ingredients:
- 1 C butter, softened
- 1 C granulated sugar
- 1 egg
- 2 C all-purpose flour
- 3/4 C pecans, coarsely chopped
- 1 10-ounce jar preserves (strawberry, raspberry, blackberry…)
- powdered sugar, or powdered sugar icing for top
Beat butter and sugar with a mixer on medium until combined; add egg and beat until combined. Beat in as much of the flour as you can with the mixer, and switch to a spoon for mixing in the rest. Stir in the chopped pecans. Set aside 1 cup of the dough for the topping. Press the remaining dough into the bottom of an ungreased 9x9x2-inch pan. Spread preserves over crust to about 1/2 inch of the edges. Dot with remaining dough that you set aside. Bake at 350 degrees for about 45 min. or until the topping is golden brown. Cool in pan on rack. Drizzle top with icing or sift powdered sugar on top using a sifter to sprinkle evenly. Makes about 24 bars.
